Italian Salads

Cooking Class

 

Taught by Andrea Loreto

 


 

What makes a salad authentically Italian? The answer is surprisingly simple. Use the freshest ingredients available.  Italians have been eating salads for centuries.  One of the first may have been eaten when a Greek colonist on Sicily tossed together some of the wild herbs and greens that covered the island.  Andrea takes salad a few steps further with additions such as cured beef, goat cheese, and the combining of creamy white beans and tuna.  Truly a savory delight.

  • Bresaola e radicchio – radicchio salad with cured Italian beef
  • Insalata con pere e pecorino – green salad with pear, goat cheese and caramelized walnuts
  • Insalata con fagioli e tonno – tuna and white bean salad
  • Pomodori gratinati – baked filled tomatoes

Andrea Loreto ~ Born in Florence, Italy, Andréa now calls Eugene his home. Having spent the first 30 years of his life enjoying fine food and convivial living surrounded by friends and family in Tuscany, he found that his passion for high quality food and meaningful dining experience followed him. Indeed, like his musical accent, it is the very foundation of who he is and part of what consistently draws people tall over the world to his table. Andrea's earliest memories are of cooking side by side with his grandmother in he small kitchen in the countryside outside Pisa. Founder and owner of an Italian import company, Andréa divides his time between running a business, keeping up with his young son, and sharing his enthusiasm for cooking and entertaining with others.

  • Grilled chicken and a variety of toppings. Students will build their own ultimate chicken salad.
