A Mediterranean Mood

Cooking Class

The sun-baked landscapes of the Mediterranean embrace temperate climates that play host to a tremendous range of flavors and textures.  This menu boasts dishes with Spanish, Italian and French influence.  Two classes are being offered.

 

 

 

 

Menu

  • Garlic and Saffron Soup with Manchego Croutes -  Creamy, bread-thickened garlicky nectar topped with a crispy Spanish sheep’s milk crôutes
  • Fresh Cod Cakes with Orange and Olive Salad - As delicious as a crab cake, these little cakes are flavored with fresh coriander and mint and sparkle with this jewel-like sectioned orange salad
  • Roast Duck Breast with Fennel and Rosemary - This unique method for oven-roasted duck breast shines with the balmy flavors of fennel and rosemary
  • Chocolate Banyuls Cake – Banyuls (a sweet fortified wine from the Grenache grape) is a perfect partner for a rich bittersweet chocolate torte, topped with a dollop of Banyuls cream

Gayle Jolley ~ Gayle is as passionate about great food as a painter is of color. For over 20 years, she has artfully presented classes on Italian, French, Spanish, Mexican, Thai and Indian cuisine. She is the founder of “In Good Taste,” has owned and managed her own catering service and served as catering director for the Heathman Hotel, The Kimpton Group’s Vintage Plaza and Pazzo Ristorante. Gayle teaches with flourish!

Starry Skies Picnic

Whole Meal Salads

  • Date:  July 31st

  • Time: 11-12:30pm

Menu

  • Grilled chicken and a variety of toppings. Students will build their own ultimate chicken salad.
