 BBQ Chicken Chopped Salad Courtesy of Ann Schar


Fried Tortilla Strips:

Vegetable oil for deep frying

12 corn tortillas cut into ¼ inch wide strips


In a deep, heavy7 frying pan, heat several inches of vegetable oil.  Fry the tortilla strips in batches until evenly golden, 1 – 2 minutes.  Drain on a paper towel, salt and cool.



¼ teaspoon dry mustard

¼ teaspoon water

1 ½ cups mayonnaise

½ cup buttermilk

¼ cup sour cream

1 tablespoon cider vinegar

1 tablespoon green onions, chopped

1 teaspoon minced garlic

2 teaspoons minced parsley

¾ teaspoon Worcestershire sauce

1 teaspoon minced fresh dill

½ teaspoon dry oregano

1 teaspoon fresh basil finely chopped

¼ teaspoon pepper


In a bowl mix the mustard and water together, forming a paste.  Add remaining ingredients; mix with wire whisk until well blended.  Refrigerate.


Grilled Chicken:

2 tablespoons olive oil

1 teaspoon garlic

2 teaspoons soy sauce

2 teaspoons salt

¼ cup BBQ sauce

4 boneless chicken breasts


In a large bowl, mix together the olive oil, garlic, soy sauce, salt and BBQ sauce.  Coat the chicken breasts with this marinade and let set at room temperature for about 15 minutes.  Grill until done.  Let cool, cut into chunks or strips.



½ head iceberg lettuce, shredded

½ head romaine lettuce cut into thin strips

12 large basil leaves, chopped

1 lb jicama cut into matchsticks

2 cups shredded jack cheese

1 cup black beans, rinsed and drained

1 cup corn, fresh, canned or frozen (thawed)

¼ cup chopped cilantro

2 lbs tomatoes, diced

¼ cup thinly sliced green onions

½ cup BBQ sauce


Toss together all the ingredients except the sauce.  Add the chicken, one-half the tortilla strips and toss with the dressing and BBQ sauce.  Top with more tortilla strips.
