Think it’s too time consuming to entertain with a restaurant style meal? Think again. This scrumptious and beautiful meal is actually a snap to prepare. Perfect for Valentine’s Day or a special meal for your “sweetie”. First off, you’ll see how easy it is to do those crisp and slightly sweet candied nuts you’ve loved in restaurant salads. The golden-brown chicken breast has a savory stuffing that is quick and simple (once you see how it’s done). The squash puree looks lovely and bright in a ramekin. The fudge cake is dense and rich and SO easy you will be amazed.
Menu
· “Upscale” salad with spring greens, candied pecans, dried cranberries, and crumbly Gorgonzola cheese, with a macadamia nut oil vinaigrette (heavenly!)
· Saltimbocca style chicken breast (stuffed with ham, spinach and two cheeses), breadcrumb-coated and sautéed crispy brown, served on a pool of cranberry/raspberry coulis
· Butternut squash, sweet onion and apple puree, served in pretty ramekins
· Fastest fudge cake with chocolate ganache glaze, served with homemade vanilla ice cream
